click the gear icon in pawpaw, then "late fees".

set the rule
pick a flat fee ("$25") or a percentage of the unpaid balance ("5%"). pick when it kicks in — most operators use "7 days past due".

save
the rule applies to every new invoice from this point forward. it's added as a separate line item the moment an invoice tips past the threshold, and the customer's reminder email mentions it.
tiptell customers about late fees on the invoice itself (in the notes/memo field) the first time you bill them. "a 5% late fee applies after 7 days" upfront prevents the surprise call.
